They've been julienned, shoe-stringed, steak-cut, curly-q'd, seasoned, cheesed-up, truffled and dunked in numerous sauces, but to say the french fry is merely a fried potato is doing one of America's favorite foods a disservice.
Like the perfect burger which the fry often accompanies, making a good batch is as much an art as it is science. There are steps involved in making the perfectly crisp french fry--cutting, soaking, rinsing, re-rinsing, frying, cooling, and re-frying--and then of course, salted just so.
